Cranberry Champagne Pork Loin
2 1/2 lb. Pork Loin
4 oz. jar Cranberry Champagne Wine Spread
Melt spread with next 6 ingredients: 4 oz. apricot jam, 1 chopped small onion, 1 tsp minced garlic, 2 tbsp. red wine vinegar, 1 tsp chili powder, 1 cup dried cranberries or cranraisens.
Place cooled sauce & pork into a plastic bag. refrigerate overnight. Bake at 350 degrees for 1 1/2 hours until reaching 160 degrees with thermometer.
* May also substitute 2 1/2 lbs. pork chops
